Baked Potato Pizza

Tailgate Food - check!

1 (6.5 ounce) package pizza crust mix
1/2 pkg- Frozen Southern Style Hashbrown Potatoes (thawed)
1 tablespoon butter or margarine, melted
1/4 teaspoon garlic powder
1/4 teaspoon dried Italian seasoning
1 envelope - Dry Ranch Dressing
1 1/2 cup sour cream
6 bacon strips, cooked and crumbled
3 green onions, chopped
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded Cheddar cheese

Directions

Preheat oven to 450.

In a bowl, combine butter, garlic powder and Italian seasoning. Add potatoes and toss. Mix Sour Cream and dry Ranch Dressing Spread sour cream mixture over crust; top with potato mixture, bacon, onions and cheeses. Bake at 450 degrees F for 10-15 minutes or until cheese is lightly browned. Let stand for 5 minutes before cutting.

Pizza Paninis

Wow - these were easy and very good.


Frozen garlic Texas toast
Deli-sliced pepperoni
Shredded mozzarella cheese
Pizza sauce

Prepare garlic toast according to package directions. To assemble sandwiches, top a slice of garlic toast with pepperoni and a sprinkling of cheese, then another piece of garlic toast. Cook in a panini press until bread is golden brown and cheese is melted. Serve with warm pizza sauce for dipping.

Asian Chicken Pizza

This was really good, the combination of Asian flavors on a pizza = Yummy!


Pizza dough
1cup of chicken, chopped into small pieces
1/2 tsp. red pepper flakes (less or more depending on how hot you want it)
1/4 cup low-sodium soy sauce
2 1/2 tbsp. honey
3/4 cup rice wine vinegar OR apple cider vinegar
1 cup mozzarella cheese
Olive oil
Sesame seeds (optional)
2 tbsp. sliced green onion
1/4 cup - Teriyaki Sauce
Soy Sauce

Directions:
Preheat the oven to 450.

Combine the red pepper flakes, soy sauce, honey, and vinegar. Stir well, set aside.

In a small skillet cook the chicken. Remove from the pan and set aside. Pour the sauce mixture into the pan. Heat over medium heat until it thickens and becomes syrup like, about 10 minutes. Add the chicken, toss well.

Form the dough. Top with a drizzle of olive oil, teriyaki sauce and soy sauce (more or less depending on what's needed to make a "sauce".

Top with the chicken/glaze mixture. Make sure it's evenly coating the dough. Top with the cheese and sprinkle with sesame seeds if using.

Bake 10-12 minutes. Top with green onion. Serve hot.

Breakfast Pizza

For those of you who love it - this pizza give's Casey's Breakfast Pizza a run for it's money!; I searched to find the perfect cheese sauce as everyone knows a breakfast pizza isn't complete without this ooey gooey goodness!

1 package - prepared pizza dough
1 pound ground breakfast sausage
1 cup frozen hash brown potatoes, thawed
2 cups shredded (sharp) Cheddar cheese
5 eggs
1/4 cup milk
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 cup grated Parmesan cheese
1/2 lb - bacon
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1‑1/2 cups milk

Directions:

Preheat oven to 450.

Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

Cook bacon and drain.

Scramble Eggs - using milk, 1/2 tsp salt and 1/8 tsp pepper - cook on stovetop.

Melt butter in medium saucepan over medium heat. Stir in flour, salt and black pepper until smooth. Gradually stir in milk; cook and stir until thickened. Stir in 1/2 cup cheddar cheese until melted.

Spoon cheese sauce over crust -top with sausage, hashbrowns, bacon and finally remaining 1 1/2 cups cheddar and parmesan cheeses. 

Bake for 10 - 12 minutes

Mexican Pizza

A nice twist on traditional pizza - the bean/spice "sauce" is quite tasty.  The original recipe didn't include ground beef but I added it to ours and it turned out really good.

Pizza Dough (I recommend Trader Joe's)
1 can black beans, rinsed and drained
½ tsp. cumin
¼ tsp. paprika
¼ tsp. cayenne
3 tbsp. Chicken Broth
1 lb - Ground Beef
2 cups - Mexican Cheese Blend
1 jalapeño, seeded and diced
1/2 cup red onion, finely chopped
1/2 cup tomato, seeded and diced
1/2 cup corn (fresh or frozen)
3-4 tbsp. chopped fresh cilantro
Salt and pepper, to taste

Preheat oven to 450.

Roll out the pizza dough into a 14 inch round.  Lightly brush the perimeter of the dough with olive oil.

Brown ground beeft in skillet.  Meanwhile - combine the black beans, cumin, paprika and cayenne in the bowl of a food processor (I used our Magic Bullet).  Puree until ground into a paste.  Add the chicken broth 1 tablespoon at a time - continuing to puree in between additions.

Spread the bean puree onto the shaped pizza crust in an even layer.  Add ground beef and then layer with half of the cheese.  Sprinkle the jalapeño, red onion, tomato, corn and cilantro over the inital cheese layer and then top with the remaining cheese.  Season with salt and pepper if desired.

Bake until the cheese is melted and bubbling and the crust is lightly browned, about 10-12 minutes.

Chicken Bacon Ranch Pizza

We are big fans around here of Papa Murphy's - Chicken Bacon Ranch Pizza, so we decided to try and find a recipe that mimicks it and this one comes pretty close.

I am a big fan of Trader Joe's refridgerated Pizza Dough - I buy 5 or so at a time, freeze and then thaw out whenever we make a homeade pizza.

Pizza dough

Topping 
2 cups cooked chicken breast halves (chopped)
8 slices cooked bacon (cut up)
1/4 cup red onion (chopped)
2 cups Mozzerella Cheese (shredded)
1 cup tomatoes (chopped)
Pizza Sauce
1/3-1/2 cup ranch dressing
1/4 cup butter 
1 1/2 ounces cream cheese
1/2 pint heavy whipping cream 
1/2 teaspoon garlic powder 
1/4 cup grated parmesan cheese 
Salt and black pepper

Directions:
Preheat oven to 500.  Place Pizza Stone in oven and let it warm up for atleast 30 minutes.  Meanwhile, roll out pizza dough onto your pizza dough and prepare sauce
In saucepan over low heat, melt butter. Mix in the cream cheese and stir until melted. Stir in the cream and garlic powder. Increase the heat and bring to a boil. Decrease the heat and simmer, stirring often. If sauce seems too thin, sprinkle in some flour 1 teaspoon at a time. Cook and stir for desired consistency. Stir in the parmesan cheese and season with salt and pepper.

Spread your ranch dressing on your dough first, next spread your alfredo sauce on the dough.

Sprinkle half of your mozzarella cheese on the pizza. Add your shredded chicken, bacon, tomatoes and chopped onion. Sprinkle with remaining cheese and bake at 500 on the bottom rack of oven for 10 - 12 minutes or until crust appears done on the bottom.
